It combines a rich broth with tender meat, seasonal vegetables, and pasta or rice. It’s a must-have during Christmas! Although my mother makes the best escudella, if you’re visiting Barcelona, don’t worry, many restaurants prepare excellent versions of this iconic dish.

💡 Did you know? Pa amb tomàquet was born in Catalonia as a practical way to make use of stale bread. In the 18th century, farmers began rubbing tomato onto the bread to soften and flavor it.
